Numerosos estudios muestran una relaci\u00f3n directa entre el RCS de la leche y la cantidad y calidad del queso producido. <\/strong><\/div>\n<h2>Impacto en la composici\u00f3n de la leche<\/h2>\n<p>Las <strong>c\u00e9lulas som\u00e1ticas<\/strong> en la leche de oveja y cabra pueden aumentar por diversos factores, pero el principal es la <a href=\"https:\/\/aboutsmallruminants.com\/es\/clinical-mastitis-sheep-goats\/\">mastitis<\/a>.<\/p>\n<p>Un <a href=\"https:\/\/aboutsmallruminants.com\/es\/vacuna-contra-mastitis-oveja-cabra\/\">RCS alto<\/a>\u00a0est\u00e1 relacionado con <strong>cambios en la composici\u00f3n<\/strong> de la leche. \u00a0Si hay da\u00f1o en el tejido glandular se <strong>reduce la s\u00edntesis<\/strong> de algunos componentes y tambi\u00e9n <strong>aumenta la permeabilidad<\/strong> de las membranas, lo que provoca el paso de componentes de la sangre a la leche.<\/p>\n<figure id=\"attachment_8366\" aria-describedby=\"caption-attachment-8366\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-8366\" src=\"https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy.png\" alt=\"\" width=\"600\" height=\"383\" srcset=\"https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy.png 623w, https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy-300x192.png 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-8366\" class=\"wp-caption-text\">Fig 1. La mayor\u00eda de leche de cabra y oveja se destina a la producci\u00f3n de queso y otros productos l\u00e1cteos.<\/figcaption><\/figure>\n<p>La leche con RCS alto tiene <strong>menos grasa, case\u00edna y lactosa<\/strong>, mientras que las <strong>prote\u00ednas de suero y el PH aumentan<\/strong>. Esto resultar\u00e1 en una alteraci\u00f3n de la composici\u00f3n fisicoqu\u00edmica del queso.<\/p>\n<p>Por ejemplo, la <strong>coagulaci\u00f3n<\/strong> del queso se ve alterada por los cambios en el contenido de <strong>case\u00edna<\/strong>, ya que afectan la <strong>funci\u00f3n del cuajo<\/strong> y de los cultivos iniciadores.<\/p>\n<p>Cuando el RCS es alto tambi\u00e9n aumentan los de <strong>iones de cloro<\/strong> y alteran la <strong>presi\u00f3n osm\u00f3tica<\/strong> de la leche, factor que tambi\u00e9n influye en el <strong>tiempo de coagulaci\u00f3n<\/strong>.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">Los cambios en la coagulaci\u00f3n y reducci\u00f3n de rendimiento quesero aumentan los costes de producci\u00f3n y reducen los beneficios.<\/span><\/strong><\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h2>C\u00e9lulas som\u00e1ticas y enzimas<\/h2>\n<p>La <strong>plasmina<\/strong> es la <strong>enzima proteol\u00edtica<\/strong> m\u00e1s abundante en la leche. Su precursor es el <strong>plasmin\u00f3geno<\/strong>, y la presencia de c\u00e9lulas som\u00e1ticas favorecen su transformaci\u00f3n en plasmina (sobre todo macr\u00f3fagos). Las caracter\u00edsticas del queso se pueden ver alteradas si se produce a partir de leche con alto RCS.<\/figcaption><\/figure>\n<p>La <strong>prote\u00f3lisis<\/strong> tambi\u00e9n resulta en la producci\u00f3n de <strong>aminas biog\u00e9nicas<\/strong> (compuestos nitrogenados) como histamina, serotonina, tiramina, triptamina\u2026 etc. Unos niveles altos de estos compuestos pueden provocar <strong>intoxicaciones<\/strong>.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">El sabor del queso depende de diversas reacciones enzim\u00e1ticas como prote\u00f3lisis, lip\u00f3lisis y fermentaci\u00f3n.<\/span><\/strong><\/p><\/blockquote>\n<p>Los <strong>leucocitos<\/strong> tambi\u00e9n producen enzimas <strong>lipol\u00edticas<\/strong>. Las <strong>lipasas<\/strong> modifican la membrana de los <strong>gl\u00f3bulos de grasa<\/strong> de la leche y se liberan <strong>\u00e1cidos grasos<\/strong>, como el but\u00edrico.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">La lip\u00f3lisis provoca sabor rancio en el queso y la prote\u00f3lisis amargor, adem\u00e1s de afectar la textura.<\/span><\/strong><\/p><\/blockquote>\n<h2>Conclusiones<\/h2>\n<p>\u2013 El RCS afecta en gran medida la <strong>producci\u00f3n y calidad del queso<\/strong>, por cual es interesante monitorizarlo en las explotaciones<\/p>\n<p>\u2013 Si no usamos leche de buena calidad no tendremos un buen rendimiento quesero, lo que generar\u00e1 <a href=\"https:\/\/aboutsmallruminants.com\/es\/origen-costes-mastitis-cabras-ovejas\/\">p\u00e9rdidas econ\u00f3micas<\/a>.<\/p>\n<p>\u2013 Es necesario establecer medidas que ayuden a controlar el RCS en la explotaci\u00f3n: manejo y <a href=\"https:\/\/aboutsmallruminants.com\/es\/vacuna-mastitis-control\/\">vacunaci\u00f3n<\/a>.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Art\u00edculo escrito por:\u00a0<\/strong><br \/>\nTania Per\u00e1lvarez Puerta.
