De nombreuses \u00e9tudes ont montr\u00e9 un lien direct entre le CCS du lait et la quantit\u00e9 et la qualit\u00e9 du fromage produit. <\/strong><\/div>\n<h2>Impact sur la composition du lait<\/h2>\n<p>Les <strong>cellules somatiques<\/strong> dans le lait de brebis et de ch\u00e8vre peuvent augmenter sous l\u2019influence de diff\u00e9rents facteurs, dont le principal est la <a href=\"https:\/\/aboutsmallruminants.com\/fr\/clinical-mastitis-sheep-goats\/\">mammite<\/a>.<\/p>\n<p>Un <a href=\"https:\/\/aboutsmallruminants.com\/fr\/vaccin-mammite-ovine-caprine\/\">CCS \u00e9lev\u00e9<\/a>\u00a0est li\u00e9 \u00e0 des <strong>alt\u00e9rations de la composition<\/strong> du lait. Si le tissu glandulaire est endommag\u00e9, <strong>la synth\u00e8se<\/strong> de divers composants est r\u00e9duite et <strong>la perm\u00e9abilit\u00e9<\/strong> des membranes augmente, ce qui accro\u00eet le passage de composants du sang dans le lait.<\/p>\n<figure id=\"attachment_8366\" aria-describedby=\"caption-attachment-8366\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-8366\" src=\"https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy.png\" alt=\"\" width=\"600\" height=\"383\" srcset=\"https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy.png 623w, https:\/\/aboutsmallruminants.com\/wp-content\/uploads\/2023\/05\/goat-sheep-milk-dairy-300x192.png 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-8366\" class=\"wp-caption-text\">Fig. 1. La majorit\u00e9 du lait de ch\u00e8vre et de brebis est destin\u00e9e \u00e0 la production de fromages et d\u2019autres produits laitiers.<\/figcaption><\/figure>\n<p>Le lait pr\u00e9sentant un CCS \u00e9lev\u00e9 contient <strong>moins de graisses, de cas\u00e9ines et de lactose<\/strong>, tandis que les <strong>prot\u00e9ines s\u00e9riques et le PH augmentent<\/strong>. Cela entra\u00eenera une alt\u00e9ration de la composition physico-chimique du fromage.<\/p>\n<p>Par exemple, la <strong>coagulation<\/strong> du fromage est alt\u00e9r\u00e9e par les changements dans la teneur en <strong>cas\u00e9ines<\/strong>, car ces derni\u00e8res affectent la <strong>fonction de la pr\u00e9sure<\/strong> et des ferments.<\/p>\n<p>Avec un CCS \u00e9lev\u00e9, les <strong>ions chlorures<\/strong> augmentent \u00e9galement et la <strong>pression osmotique<\/strong> du lait est alt\u00e9r\u00e9e, facteur qui affecte aussi le <strong>temps de coagulation<\/strong>.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">Les alt\u00e9rations de la coagulation et la r\u00e9duction du rendement fromager augmentent les co\u00fbts de production et r\u00e9duisent les b\u00e9n\u00e9fices.<\/span><\/strong><\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h2>Cellules somatiques et enzymes<\/h2>\n<p>La <strong>plasmine<\/strong> est l\u2019<strong>enzyme prot\u00e9olytique<\/strong> la plus abondante dans le lait. Son pr\u00e9curseur est le <strong>plasminog\u00e8ne<\/strong>, et la pr\u00e9sence de cellules somatiques favorise sa transformation en plasmine (en particulier les macrophages). Les caract\u00e9ristiques du fromage peuvent \u00eatre alt\u00e9r\u00e9es s\u2019il est produit \u00e0 partir de lait pr\u00e9sentant un CCS \u00e9lev\u00e9.<\/figcaption><\/figure>\n<p>La <strong>prot\u00e9olyse<\/strong> entra\u00eene \u00e9galement la production d\u2019<strong>amines biog\u00e8nes<\/strong> (compos\u00e9s azot\u00e9s) comme l\u2019histamine, la s\u00e9rotonine, la tyramine, la tryptamine, etc. Des niveaux \u00e9lev\u00e9s de ces compos\u00e9s peuvent provoquer des <strong>intoxications<\/strong>.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">Le go\u00fbt du fromage d\u00e9pend de diff\u00e9rentes r\u00e9actions enzymatiques comme la prot\u00e9olyse, la lipolyse et la fermentation.<\/span><\/strong><\/p><\/blockquote>\n<p>Les <strong>leucocytes<\/strong> produisent \u00e9galement des enzymes <strong>lipolytiques<\/strong>. Les <strong>lipases<\/strong> modifient la membrane des <strong>globules gras<\/strong> du lait, ce qui lib\u00e8re des <strong>acides gras<\/strong>, comme l\u2019acide butyrique.<\/p>\n<blockquote class=\"pullquote align-center\"><p><strong><span style=\"font-size: 20pt;\">La lipolyse cr\u00e9e un go\u00fbt rance du fromage et la prot\u00e9olyse une amertume, en plus d\u2019affecter la texture.<\/span><\/strong><\/p><\/blockquote>\n<h2>Conclusions<\/h2>\n<p>\u2013 Le CCS affecte dans une large mesure la <strong>production et la qualit\u00e9 du fromage<\/strong>. C\u2019est pourquoi sa <strong>surveillance<\/strong> sur les exploitations est int\u00e9ressante.<\/p>\n<p>\u2013 Si nous n\u2019utilisons pas un <strong>lait de bonne qualit\u00e9<\/strong>, nous n\u2019aurons pas un bon <strong>rendement fromager<\/strong>, ce qui g\u00e9n\u00e9rera des <a href=\"https:\/\/aboutsmallruminants.com\/fr\/source-couts-mammite-brebis-chevres\/\">pertes \u00e9conomiques<\/a>.<\/p>\n<p>\u2013 Il est n\u00e9cessaire de prendre des mesures favorisant le contr\u00f4le du CCS sur l\u2019exploitation : la prise en charge et la <a href=\"https:\/\/aboutsmallruminants.com\/fr\/vaccin-mammite-biofilm\/\">vaccination<\/a>.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Article r\u00e9dig\u00e9 par :<\/strong><br \/>\nTania Per\u00e1lvarez Puerta.
